Join us on an educational adventure through each state in the USA! Each post in this series focuses on one state, and includes a regional recipe from that state. This is a fun way to get your kids involved in cooking, as well as learn a bit about United States geography! The post also includes a link to the featured state’s website, where you can learn more about the state. We also include free forms that you can download and print to use along the journey. Geography has never been so delicious!

RECIPE:
Did you know if you want to be the first person in the United States to see the sun rise in the morning, make sure you’re in Eastport Maine – the easternmost town in the country!
Maine is the country’s number one source of blueberries and lobster. This recipe takes advantage of the sweet and juicy blueberries, and is as much fun to make as it is to eat!
MAINE Blueberry Cornbread
What You Will Need:
- 2 teaspoons Vegetable Shortening
- 1 cup All-Purpose Flour
- 1 cup Yellow Cornmeal
- 1/4 cup Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1 cup Blueberries, fresh or frozen and thawed
- 1 cup Milk
- 1/4 cup Canola Oil
- 1/4 cup Honey
- 2 large Eggs, slightly beaten
- 9″ Square Baking Pan
- Colander
- 2 Medium Bowls
- Small Bowl
What You Do:
- Preheat oven to 400 degrees F.
- Use a paper towel and vegetable shortening to lightly grease the baking pan.
- In a medium bowl, mix together the flour and cornmeal. Stir well to combine, then add the sugar, baking powder, and salt – stir together well.
- Wash the blueberries in a colander and pat dry!
- Place blueberries in a small bowl, then add 2 tablespoons of the flour mixture. Gently toss the flour and blueberries with a spoon, then set aside.
- In a second medium-sized bowl, whisk together the milk, oil, honey, and eggs. (Kids love to use the whisk!)
- Add the milk mixture to the dry ingredients and stir together until the ingredients are moistened.
- Use a spatula and carefully fold the blueberries into the mixture.
- Pour the batter into the greased baking pan and bake for 20-25 minutes or until the bread is light golden brown.
- Remove from oven and serve! YUM!
