Celebrate the States Series – #24: Mississippi
Join us on an educational adventure through each state in the USA! Each post in this series focuses on one state, and includes a regional recipe from that state. This is a fun way to get your kids involved in cooking, as well as learn a bit about United States geography! The post also includes a link to the featured state’s website, where you can learn more about the state. We also include free forms that you can download and print to use along the journey. Geography has never been so delicious!

RECIPE:
Did you know that Mississippi is a Native American word that means “big river”? The Mississippi River has several nicknames, such as “Old Man River” and “Big Muddy”. Today’s recipe got its name when a waitress at a Mississippi restaurant remarked that the melted chocolate pie “reminds me of that Mississippi mud”.
MISSISSIPPI Mud Pie
What You Will Need:
- 1 quart Coffee Ice Cream
- 1/3 cup Butter
- 1-1/2 cups finely Crushed Chocolate Wafers (about 25 – kids love this step!)
- 1-1/2 cups Fudge Sauce, refrigerated
- Medium Bowl
- 9-inch Pie Plate
- Spatula
What You Do:
- Set the coffee ice cream out at room temperature for 30 minutes.
- Melt butter in a skillet over low heat. (If you prefer, you can also use the microwave to melt the butter.)
- Allow the butter to cool slightly, then pour it into a mixing bowl.
- Add crushed wafers and stir together well.
- Press the chocolate wafer mixture into the bottom and up the sides of the pie plate to form a crust.
- Fill the pie shell with coffee ice cream. Smooth the top of the ice cream evenly with a knife. Put the pie into the freezer until the ice cream is firm (about 20 minutes).
- When the ice cream is ready, top the pie with fudge sauce and spread with a spatula.
- Slice and serve!
