Celebrate the States Series – #37: Oregon

Join us on an educational adventure through each state in the USA! Each post in this series focuses on one state, and includes a regional recipe from that state. This is a fun way to get your kids involved in cooking, as well as learn a bit about United States geography! The post also includes a link to the featured state’s website, where you can learn more about the state. We also include free forms that you can download and print to use along the journey. Geography has never been so delicious!

RECIPE:

Did you know that the climate in Oregon allows for a wide variety of crops to be grown? Oregon leads the nation in winter pears, blackberries, boysenberries, and hazelnuts. Other products include potatoes, carrots, watermelons, cranberries, cheeses, and fish (especially salmon, halibut, ling cod, and shellfish).

This recipe uses cranberries that are grown in bogs or marshes in the coastal regions of Oregon. Cranberries blossom in late June or early July, and the berry harvest begins right after Labor Day.

OREGON Cranberry Cookie Bars

What You Will Need:


  • Vegetable Oil Cooking Spray

  • 2 large Eggs, beaten

  • 1/2 cup Butter, softened

  • 1-1/2 cups Sugar

  • 1 teaspoon Vanilla

  • 1-1/2 cups All-Purpose Flour

  • 1 teaspoon Baking Powder

  • 1/2 cup chopped nuts (optional)

  • 2 cups Cranberries, fresh or frozen

  • Large Mixing Bowl

  • 9″ x 12″ Baking Pan (a glass pan works best)

What You Do:


  • Preheat oven to 350 degrees F.

  • Spray vegetable oil cooking spray in a 9″ x 12″ baking pan, then set aside.

  • In a large mixing bowl, beat together eggs, butter, sugar, and vanilla. (Kids love to stir these ingredients together)!

  • Add flour and baking powder to the above mixture, and stir together well.

  • Add cranberries and nuts to the mixture, mixing well.

  • Spoon the batter into the prepared baking pan and bake for 40 to 45 minutes or until golden brown. (We recommend you check the bars after 30 minutes, depending on your oven).

  • Remove from oven and allow to cool before cutting into bars.

  • Serve and enjoy!

Variation:


  • For a slightly different taste, use brown sugar in place of the white sugar.

  • Frost the bars with a cream cheese frosting for extra flavor.

  • This recipe works with raspberries, boysenberries, or blackberries, too!

Unique Ways to Play Golf… at Home!

CircleGolfBirdies, Eagles, and Mulligans… Oh my!

My kids and I have been having a ball (no pun intended) playing golf. But not the traditional kind of golf that requires a manicured golf course, expensive equipment, or funny pants. Instead, we’ve been finding fun ways to play “golf” at home.

Here are two games we came up with. Both games can be played by kids and adults of all ages and abilities.

Have fun!

Circle Golf

This is a fun game to practice putting skills. The object is to sink putts from 9 different positions on a circle in the fewest number of strokes.

What You Need:


  • Backyard Area or Park

  • Small Golf Club, Croquet Mallet, or even a small board

  • Golf Ball, or other small ball, such as a Pinky Ball (the deeper the grass, the bigger the ball may need to be)

  • Plastic Cup or Jar

  • String, Garden Hose, or Long Jump Rope
  • 9 Markers, we like to use Marker Rounds (they have so many uses)

  • 1 or more Players

How to Play:


  • To prepare for the game, use string, a garden hose, or a jump rope to mark off a circle in your yard that is about six feet in diameter.

  • Place 9 markers around the perimeter of the circle. Don’t worry if they aren’t equally spaced. Each marker represents the “tee” and players will start putting from these positions.

  • If you are playing in your own backyard, and you have permission, dig a small hole in the center of the circle, and place a plastic cup into the hole. Save the grass you cut out, so you can fill the hole back in later. If you are playing in a park, or don’t want to dig a hole in your yard, lay a plastic cup or jar on its side so it faces the first tee position – the cup will serve as the hole. The cup will have to be turned toward each tee as the player moves around the circle.

  • One at a time, each player putts their way clockwise around the circle, beginning at the first tee and progressing through the other eight tees after successfully putting at each position.

  • Players should keep track of the number of strokes taken at each position. Have the other players count the strokes aloud as the putter plays. This involves the other players and helps everyone remember the number of strokes taken.

  • The player to complete the course in the fewest number of total strokes is the winner.

Variations:


  • Change the diameter of the circle to a larger diameter for more challenging putts.

  • If you prefer, have player one start at the first tee and record the number of strokes, then player two plays the same tee, etc. When all the players have completed the first hole, play begins again on the second hole, and so on.


Driveway Golf

Here is a fun game to play on your driveway! The object of the game is to flip or toss a small object along a “golf course” drawn with chalk on your driveway or sidewalk, in the fewest number of “strokes”.

What You Need:


  • Driveway, Sidewalk, or any Paved Surface

  • 2 or more Players

  • Chalk

  • Small Object for each Player – a small stone or bottle cap works well

How to Play:

  • The first step to playing Driveway Golf, is to design the course. Have each player draw a golf hole on the driveway – one hole usually consists of a tee-box (starting point), fairway, and the green (putting surface where the hole is located). Hazards such as water, woods or sand traps are also common. The hole should be represented by a circle that is about three inches in diameter. Use your imaginations when designing each hole along the course. For example, a hole could be located on an island in the middle of a pond, or be surrounded by trees, sand traps, and water hazards. Be creative!

  • Once the course has been drawn, number the holes from 1 to 9 (or 1 to 18 for a longer game), then determine which player will tee-off first.

  • The first player should crouch down by the tee and toss their object toward the first hole.

  • Objects that land partially or wholly in a hazard, must be placed outside the hazard, and a penalty stroke is added.

  • Play continues through the course, through the last hole. The player with the fewest total strokes wins the game.

Variations:


    GolfScoreCard
  • Use chalk to draw a score card on the driveway, as shown, to keep track of the number of strokes each player has for each hole.

  • When playing with young children, you may want to allow them a “handicap” and let them tee-off closer to the hole.

  • Create in color! Use a variety of colored chalk to create your course – blue for water hazards, green for trees, and brown for sand traps – you get the idea!

RECIPE:

Did you know that one of Oklahoma’s main crops is wheat? They are also known for growing peanuts.

This recipe uses both the wheat and peanuts to make a delicious treat!

OKLAHOMA Peanut Blonde Bars

What You Will Need:


  • Vegetable Oil Cooking Spray

  • 1/2 cup Creamy Peanut Butter

  • 1/4 cup Margarine, softened

  • 1 cup light Brown Sugar

  • 2 large Eggs

  • 1-1/2 teaspoons Vanilla Extract

  • 2/3 cup All-Purpose Flour

  • 1 cup Salted Peanuts, chopped

  • 8-inch Square Baking Pan

  • Mixing Bowl

What You Do:


  • Preheat the oven to 350 degrees F.

  • Spray the baking pan with vegetable oil cooking spray.

  • In a medium-sized mixing bowl, cream the peanut butter with the margarine until smooth.

  • Add brown sugar gradually, and beat until well blended.

  • Add eggs one at a time and continue to stir the mixture.

  • Add vanilla extract, and stir well.

  • Slowly add flour to the peanut butter mixture.

  • Fold in the chopped peanuts.

  • Pour the batter into the prepared baking pan. Spread the batter evenly in the pan.

  • Bake for 30 to 35 minutes, then remove the pan from the oven and cool for 15 minutes.

  • Cut into 2-inch squares, then remove the bars from the pan and cool completely on a wire rack before serving.

Berried Treasure! Gardening Activities for Families (Part 4)

BerriedTreasureChildren of all ages enjoy growing strawberries!

The plants are easy to grow and the reward is like “berried” treasure!

Strawberry plants can be grown in a garden, in containers, or in hanging baskets. To make strawberry gardening managable for children, here are instructions to create a hanging basket strawberry patch!

Grow Strawberries

What You Will Need:


  • 24 Strawberry Plants

  • Large Wire-frame Hanging Basket (16″ diameter works very well)

  • Potting Soil

  • Sphagnum Moss (found at garden centers), or Coconut Fiber, or a specially designed basket liner

  • Small Shovel or Old Spoon

  • Water

What You Do:


  • Line the wire-frame hanging basket with damp sphagnum moss, coconut fiber, or a specially designed basket liner.

  • Plant 18 strawberry plants around the outside surface of the basket, roots first, through the sphagnum moss. Make sure plants are distributed evenly around the entire perimeter of the basket.

  • Carefully fill the basket with potting soil. Children can use a small hand shovel or an old spoon to scoop the soil into the basket.

  • Plant the remaining 6 strawberry plants into the soil in the top of the basket. Make sure not to bury the crown (the part where the green stem starts).

  • Use the heel of your hand to press down the soil around the plants.

  • Give your plants a good, long drink of water.

  • Place your basket in a bright sunny place, such as a porch or patio. Strawberry plants need at least 6 hours of sun each day.

  • Strawberries need to be watered daily. Make sure the soil does not dry out! Keep the soil moist, but not soggy.

  • Shortly after planting, small white flowers will appear on the plants. Then about 21 days after the white flowers bloom, the berries will begin to appear. At first, the berries will be small and green, but will eventually ripen and turn red.

  • When the berries are red, it’s time to pick them! To pick a berry, gently twist if off the stem – no need to pull.

  • Wash carefully and enjoy your berried treasures!

Tips and Notes:


  • In cool areas (zones 1 to 5), it’s best to plant strawberries in the spring. In warmer areas, you can grow strawberries all year ’round.

  • Most garden centers have a variety of strawberry plants for you to choose from. For example, June-bearing and ever-bearing. June-bearing plants produce one crop of fruits in June; and ever-bearing plants produce fruits in June and continually throughout the year until the first frost. Choose the plants that will work best for your garden.

  • Strawberry plants typically grow 6″ to 8″ tall, spreading out about one foot across with long runners. If you want more plants, let the runners grow. Or, pinch off the runners to get larger plants with small yields of big berries.

  • For the first few weeks after planting your strawberries, remove all the blossoms on ever-bearing plants by either pinching or cutting them. This gives the plant time to establish itself before expending energy on growing fruit.

  • If you don’t have a place for a hanging basket, follow the steps above, then place the basket on a pillar or post. This creates a beautiful planter for a patio!

  • At the end of the growing season, move your hanging basket into a sheltered area covered with several inches of hay, or move it to a shed or basement that doesn’t freeze. In the spring, water your plants and they will be ready to grow again.

RECIPE:

Did you know that Ohio produces more hothouse tomatoes than any other state except California? These brightly colored red tomatoes are grown in a greenhouse year round. With their stems still attached, they’re often referred to as On the Vine tomatoes, and offer a mild-flavor and great taste all year long.

This recipe uses juicy tomatoes for a delicious pizza – perfect for serving during Family Game Night!

OHIO Hot House Tomato Pizza

What You Will Need for the Sauce:


  • 4-5 Hot House Tomatoes, chopped

  • 1/4 White Onion, chopped

  • 1 clove Garlic, crushed

  • 1/2 teaspoon fresh Thyme, picked

  • 1 tablespoon fresh Basil, roughly torn

  • 1-1/2 teaspoon Extra Virgin Olive Oil

  • Sea Salt, to taste

  • Fresh Ground Black Pepper, to taste

What You Will Need for the Pizza:


  • 4-5 Hot House Cherry Tomatoes, sliced

  • 1 large Pizza Dough, prepared

  • 3/4 cup Parmesan Cheese, grated

  • 1 cup Mozzarella Cheese, grated

  • 1/4 cup Black Olives, pitted and chopped

  • 1/4 cup Fresh Basil, torn

What You Do:


  • Place oil in medium hot saucepan and add onions and garlic. Cook until onions are transparent.

  • Add tomatoes (for sauce), thyme, salt and pepper and cook at medium heat until tomatoes start to break down slightly. Turn down the heat and let simmer and reduce for about 20 minutes.

  • Take pan off heat and puree mixture with a hand blender. Check seasoning and add basil.

  • Sauce can be kept in the refrigerator for 2 to 3 days.

  • Preheat oven to 350 degrees F.

  • Spread sauce on pizza dough, leaving a small portion of the edge uncovered.

  • Layer on the tomato slices, just a little course sea salt, pepper, olives, mozzarella cheese, and parmesan.

  • Place pizza on pan or directly on oven rack. Bake for 15 to 20 minutes, or until dough has browned on the bottom and parmesan is bubbling on top.

  • Remove from oven and top with fresh basil.

  • Cut and serve!

Grow Your Own Forts! Gardening Activities for Families (Part 3)

To help you get started, here are our favorite “green” forts to create:

Sunflower Forts – Children love to cultivate their fort and enjoy the unique shady retreat they have made. This is an easy project that can work in most backyards.

Garden Tunnel – In a sunny area of your garden, make a tunnel for kids to play in and for pumpkins to grown on!

Bean Teepee – Make a cool, leafy hiding place! Somewhere in your garden, create a fun hiding place for kids to keep cool in the Summer!

Fairy or Elf Garden – Create a mini-Fairy (or Elf) Garden just for kids! In the shelter of a large, shady tree, design a miniature world where fairies and elves will visit.

Did You Know?

Most people think of the dandelion as a “worthless weed”, but did you know that every single part of a dandelion can be used? The leaves, the stems and flowers, and the roots! The leaves can be boiled and served as a vegetable, or used raw in salads and soups. The leaves are an important source of Vitamin A, and half a cup of them per day will satisfy a person’s vitamin A requirements. Sauteed, dandelion buds can be used in omlets; the petals in sandwiches; the stems and blossoms for making wine. Even the dandelion root can be roasted to become an imitation coffee. The sticky white milk that flows from the severed root contains latex, from which latex rubber can be made. The root also contains a substance that is used as a laxative. The dandelion is a versatile plant!
