<p>John Chapman (Johnny Appleseed) was born on September 26, 1774 and is believed to have died on March 11, 1845 &#8211; so there are actually two dates each year that commemorate John Chapman.</p>
<p>While most people probably celebrate Johnny Appleseed Day in the Fall in conjunction with the Fall apple harvest, we like the idea of celebrating today instead, with delicious apples as a way to welcome Spring and the Spring planting season!</p>

<p><strong><big>Apple Pizza</big></strong></p>
<p><strong>What You Will Need:</strong><br />
<UL><LI>2 cans of regular sized Refrigerated Buttermilk Biscuits</LI><br />
<LI>4 finely chopped Granny Smith Apples</LI><br />
<LI>2 cups Finely Shredded Cheddar Cheese, or your favorite cheese</LI><br />
<LI>4 tablespoons All-Purpose Flour</LI><br />
<LI>1 cup firmly packed Brown Sugar</LI><br />
<LI>2 teaspoons Cinnamon</LI><br />
<LI>Small Mixing Bowl</LI><br />
<LI>10&#215;13 Greased Baking Dish</LI><br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><LI>Preheat oven to 350 degrees F.</LI><br />
<LI>Place biscuits into a lightly greased baking dish and flatten biscuits to form a dough.</LI><br />
<LI>Spread a layer of chopped apples on top of the dough.</LI><br />
<LI>Sprinkle cheese over the apples.</LI><br />
<LI>Mix flour, brown sugar, and cinnamon in a small bowl, then sprinkle over the top of the apples and cheese.</LI><br />
<LI>Bake apple pizza for 15 to 20 minutes or until apples are tender and crust is golden brown.</LI><br />
<LI>Allow pizza to cool slightly, cut into pieces, and serve!  (Thanks, Johnny!)</LI><br />

<p><strong>What You Will Need:</strong><br />
<UL><LI>1/2 gallon Vanilla Ice Cream, softened</LI><br />
<LI>1 can 100% Canned Pumpkin (not pumpkin pie filling)</LI><br />
<LI>1/2 cup Brown Sugar, packed</LI><br />
<LI>1/2 teaspoon Ground Ginger</LI><br />
<LI>1/4 teaspoon Cinnamon</LI><br />
<LI>1/4 teapsoon Nutmeg</LI><br />
<LI>1 tablespoon Orange Juice</LI><br />
<LI>1 Large Bowl</LI><br />
<LI>1 Medium Bowl</LI><br />
<LI>Mixer</LI><br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><LI>Place ice cream in a large bowl and set aside.</LI><br />
<LI>Mix canned pumpkin, sugar, ginger, cinnamon, nutmeg, and orange juice with a mixer on low speed.  </LI><br />
<LI>Blend pumpkin mixture into ice cream, stirring well.  Kids love to do this step &#8211; just give them a large spoon (and let them lick it when you&#8217;re done)!</LI><br />
<LI>Cover mixture and freeze for several hours until firm.</LI><br />
<LI>When you are ready to serve, let the ice cream soften slightly before scooping and serving.  Enjoy!</LI><br />
<LI>Makes 8 to 10 servings.</LI><br />

<LI>Orange Food Coloring (mix red and yellow food coloring if needed)</LI><br />
<LI>Prepared Lemon Jell-O</LI><br />
<LI>Clear Trifle Bowl</LI><br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><LI>Crumble the angel food cake into the bottom of a clear glass serving bowl.  This forms the white layer found on a piece of candy corn.</LI><br />
<LI>Layer prepared vanilla pudding, tinted orange with food coloring, on top of the cake layer.  This forms the orange portion of a piece of candy corn.</LI><br />
<LI>Top the orange pudding layer with a layer of prepared lemon gelatin.  This forms the yellow layer of the candy corn.</LI><br />
<LI>Serve and enjoy!</LI><br />

<UL><LI>There are many ways you can easily vary this cute and delicious recipe.  For example, use a yellow cake recipe to form the cake layer &#8211; this will be the yellow layer of candy corn.  Top the cake layer with orange-tinted vanilla pudding &#8211; the orange layer.  Then top the treat off with a layer of whipped cream &#8211; the white layer.  Embellish with a piece of real candy corn!</LI><br />

<LI>8 cups Milk</LI><br />
<LI>1 teaspoon Vanilla Extract</LI><br />
<LI>2 drops Orange Food Coloring</LI><br />
<LI>Whipped Cream and Chocolate Nonpareils for garnish, optional</LI><br />
<LI>Medium-sized Glass Bowl</LI><br />
<LI>Medium-sized Saucepan</LI><br />

<p><strong>What You Do:</strong><br />
<UL><LI>Coarsely chop the white chocolate and place it in a medium-sized glass bowl &#8211; set aside.</LI><br />
<LI>In a medium-sized saucepan, heat milk over medium heat until bubbles begin to form at the edge of the surface (about 4 minutes).</LI><br />
<LI>Pour milk over chocolate, and stir until chocolate is melted and the mixture is smooth.</LI><br />
<LI>Whisk in vanilla and food color, then continue to whisk until a light foam forms on the surface.</LI><br />
<LI>Pour into 10 clear glass mugs and garnish with whipped cream and chocolate nonpareils.</LI><br />
<LI>Serve immediately.</LI><br />

<p><strong><big>Orange Halloween Punch</big></strong></p>
<p><strong>What You Will Need:</strong><br />
<UL><LI>1 can (46 ounces) Pineapple Juice, divided</LI><br />
<LI>1 package (3 ounces) Orange Gelatin</LI><br />
<LI>1 carton (64 ounces) Orange Juice</LI><br />
<LI>1 liter Ginger Ale, chilled</LI><br />
<LI>1 quart Orange Sherbet</LI><br />
<LI>Large Saucepan</LI><br />
<LI>Large Pitcher or similar container</LI><br />
<LI>Clear Glass Punch Bowl</LI><br />
<LI><a href="http://www.escapadedirect.com/pumpkinglasses.html">Spirit Raising Pumpkin Glasses</a>, 1 for each guest<br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><LI>In a large saucepan, boil 1 cup of pineapple juice, then remove from heat.<br />
<LI>Stir gelatin into the hot pineapple juice until it is dissolved.  Allow mixture to cool slightly, then transfer it to a large pitcher or container.</LI><br />
<LI>Add orange juice and remaining pineapple juice, then chill the mixture.</LI><br />
<LI>Just before serving, pour the mixture into a punch bowl and add ginger ale and mix well.</LI><br />
<LI>Top punch with scoops of orange sherbet.</LI><br />
<LI>Serve and enjoy!</LI><br />
<LI>Makes about 20 servings.</LI><br />

<strong>RECIPE:</strong></p>
<p>Did you know that Washington is first in the nation for growing apples?  Each year, 10 to 12 billion apples are harvested.  The Red Delicious is the most popular variety, contributing to over half of the state&#8217;s production.</p>
<p>This recipe takes advantage of sweet and juicy, newly harvested apples!  It&#8217;s an easy recipe that is fun to make, and one that kids really enjoy!</p>
<blockquote><p><strong>WASHINGTON Baked Apples</strong> </p>
<p><strong>What You Will Need:</strong><br />
<UL><LI>2 Red Delicious or Golden Delicious Apples</LI><br />
<LI>1 teaspoon Lemon Juice</LI><br />
<LI>1/2 cup Strawberry Jam, Jelly, or Preserves</LI><br />
<LI>2 tablespoons All Purpose Flour</LI><br />
<LI>3 tablespoons Butter, cold and diced</LI><br />
<LI>3 tablespoons Brown Sugar</LI><br />
<LI>1/2 cup uncooked Oats</LI><br />
<LI>1/4 teaspoon Ground Cinnamon</LI><br />
<LI>Pinch of Salt</LI><br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><LI>Preheat oven to 350 degrees F.</LI><br />
<LI>Cut each apple in half along the middle of the apple.</LI><br />
<LI>Use a melon baller to remove the apple core from both halves of the apple and to create a small rounded hole in the apple half.</LI><br />
<LI>Rub lemon juice on the exposed apple flesh (this helps prevent the apple from turning brown).</LI><br />
<LI>Place 1 tablespoon of jam into the hole of each apple half.</LI><br />
<LI>To make a cripsy topping, mix flour, butter, brown sugar, oats, cinnamon, and salt together in a small bowl.</LI><br />
<LI>Press the topping mixture on the top of each apple, covering the jam.</LI><br />
<LI>Place apple halves into a baking dish filled with about 1/4 inch of water and bake the apples until the top is golden brown and the apple is tender (about 35 minutes).</LI><br />
<LI>Remove apples from oven, allow to cool slightly, and serve!</LI><br />

<strong>RECIPE:</strong></p>
<p>Did you know that Virginia is famous for its ham?  Virginia ham gets its special flavor from peanuts that are fed to the hogs as well as from how the hams are prepared.  The hams are first allowed to absorb salt (this is called &#8220;curing&#8221;), and then placed over fires of hickory or oak wood to absorb the woodsmoke flavor (this is called &#8220;smoking&#8221;).  Finally, the hams are rubbed with pepper and hung to age for at least six months (this is called &#8220;aging&#8221;).</p>
<p>Kids love this recipe!</p>
<blockquote><p><strong>VIRGINIA Ham with Cherry Sauce</strong> </p>
<p><strong>What You Will Need:</strong><br />
<UL><LI>3/4 pound boneless, cooked Virginia Ham</LI><br />
<LI>3 tablespoons Brown Sugar</LI><br />
<LI>4 teaspoons Cornstarch</LI><br />
<LI>1/4 teaspoon Cinnamon</LI><br />
<LI>1 cup Apple Juice</LI><br />
<LI>1 tablespoon Vinegar (we use Apple Cider Vinegar)</LI><br />
<LI>1 16-ounce can pitted tart Red Cherries, packed in water, drained</LI><br />
<LI>Medium Saucepan</LI><br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><LI>Preheat oven to 350 degrees F.</LI><br />
<LI>Wrap the ham in foil, then place it in the oven to heat it up (about 30 minutes).</LI><br />
<LI>When there are about 10 minutes before the ham is done, make the Cherry Sauce.  In the saucepan, mix together the brown sugar, cornstarch, and cinnamon &#8211; then stir in the apple juice and vinegar.  Cook, stirring frequently, over medium heat until the sauce is thick and bubbly.</LI><br />
<LI>Cook the sauce for 2 more minutes, then stir in the cherries.</LI><br />
<LI>Cook sauce for another 4 minutes, or until the cherries are heated through.</LI><br />
<LI>Remove the foil-wrapped ham from the oven and place it on a plate.</LI><br />
<LI>Ladle Cherry Sauce over the ham and serve.  Yum!</LI><br />

			<content:encoded><![CDATA[<p>Join us on an educational adventure through each state in the USA!  Each post in this series focuses on one state, and includes a regional recipe from that state. This is a fun way to get your kids involved in cooking, as well as learn a bit about United States geography! The post also includes a link to the featured state&#8217;s website, where you can learn more about the state. We also include free forms that you can download and print to use along the journey. Geography has never been so delicious!</p>

<strong>RECIPE:</strong></p>
<p>Did you know that in 2001, Green Jell-O was declared the &#8220;Official State Snack&#8221; of Utah?  Utah farmers mostly raise livestock such as beef cattle, dairy cattle, and turkeys.  Because of the dry climate, irrigation has to be used to grow wheat, potatoes, apples, and peaches.</p>
<p>Here is a quick and simple recipe for Utah&#8217;s official snack!</p>
<blockquote><p><strong>UTAH Green Jell-O</strong> </p>
<p><strong>What You Will Need:</strong><br />
<UL><LI>1 cup Water</LI><br />
<LI>1 6-ounce package Lime Gelatin</LI><br />
<LI>1/2 cup Sugar</LI><br />
<LI>2 tablespooons fresh Lemon Juice (optional)</LI><br />
<LI>1 cup Crushed Pineapple, un-drained</LI><br />
<LI>2 cups Whipping Cream</LI><br />
<LI>Small Saucepan</LI><br />
<LI>Medium Sized Bowl</LI><br />
<LI>9&#8243; x 13&#8243; Glass Pan</LI><br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><LI>Bring water to boil in a small saucepan.</LI><br />
<LI>Put gelatin and sugar in a medium sized bowl, then add boiling water and stir until the gelatin is dissolved.</LI><br />
<LI>Add lemon juice and stir in crushed pineapple.</LI><br />
<LI>Refrigerate mixture until it is slightly syrupy.</LI><br />
<LI>Remove mixture from refrigerator and fold whip cream into gelatin mixture.</LI><br />
<LI>Transfer mixture to a 9&#8243; x 13&#8243; glass pan, then refrigerate several hours until firm.</LI><br />
<LI>Serve and enjoy!</LI><br />

<strong>RECIPE:</strong></p>
<p>Did you know that Texas is the top state in the US for raising beef cattle?  The Texas state food is chili &#8211; a spicy stew with beef and tomatoes!</p>
<p>This recipe is for an easy Texas-style chili that isn&#8217;t too spicy for kids.  You can change it to make it more spicy, if you&#8217;d like.</p>
<blockquote><p><strong>TEXAS Chili</strong> </p>
<p><strong>What You Will Need:</strong><br />
<UL><br />
<LI>2-1/2 pounds lean Chuck Beef, ground or cubed</LI><br />
<LI>1 pound lean Pork, ground</LI><br />
<LI>4 cloves Garlic, finely chopped</LI><br />
<LI>1 cup Onion, finely chopped</LI><br />
<LI>8 ounces Tomato Sauce</LI><br />
<LI>1 cup Water</LI><br />
<LI>1 can Dark Beer</LI><br />
<LI>3 tablespoons Chili Powder</LI><br />
<LI>2 tablespoons Instant Beef Bouillon (6 cubes)</LI><br />
<LI>2 tablespoons Ground Cumin</LI><br />
<LI>2 teaspoons Paprika</LI><br />
<LI>2 teaspoons Oregano Leaves</LI><br />
<LI>2 teaspoons Sugar</LI><br />
<LI>1/2 teaspoon Ground Coriander</LI><br />
<LI>1 teaspoon Unsweetened Cocoa</LI><br />
<LI>1/2 teaspoon Hot Sauce</LI><br />
<LI>1 teaspoon Cornmeal</LI><br />
<LI>1 teaspoon Flour</LI><br />
<LI>1 teaspoon Warm Water</LI><br />
<LI>Large Saucepan</LI><br />
</UL></p>
<p><strong>What You Do:</strong><br />
<UL><br />
<LI>In a large saucepan, brown half of the beef and pork, then drain the fat.</LI><br />
<LI>Remove meat from saucepan and set aside.</LI><br />
<LI>Brown the remaining half of meat, then drain all but about 2 tablespoons of the fat.</LI><br />
<LI>Add garlic and onion to the saucepan, and cook until tender.</LI><br />
<LI>Add the first half of the meat back to the saucepan, then add tomato sauce, water, beer, chili powder, bouillon, cumin, paprika, oregano, sugar, coriander, cocoa, and hot sauce.  Stir well.</LI><br />
<LI>Bring the chili mixture to a boil, then reduce heat and simmer covered for 2 hours.</LI><br />
<LI>In a small bowl, stir together the cornmeal and flour, then add the warm water and mix well.</LI><br />
<LI>Stir the cornmeal mixture into the chili and cook for an additional 20 minutes, covered.</LI><br />
<LI>Sprinkle chili with shredded cheese, if desired, and serve!</LI><br />
