RECIPE:

Did you know that Mississippi is a Native American word that means “big river”? The Mississippi River has several nicknames, such as “Old Man River” and “Big Muddy”. Today’s recipe got its name when a waitress at a Mississippi restaurant remarked that the melted chocolate pie “reminds me of that Mississippi mud”.

MISSISSIPPI Mud Pie

What You Will Need:

1 quart Coffee Ice Cream

1/3 cup Butter

1-1/2 cups finely Crushed Chocolate Wafers (about 25 – kids love this step!)

1-1/2 cups Fudge Sauce, refrigerated

Medium Bowl

9-inch Pie Plate

Spatula

What You Do:

Set the coffee ice cream out at room temperature for 30 minutes.

Melt butter in a skillet over low heat. (If you prefer, you can also use the microwave to melt the butter.)

Allow the butter to cool slightly, then pour it into a mixing bowl.

Add crushed wafers and stir together well.

Press the chocolate wafer mixture into the bottom and up the sides of the pie plate to form a crust.

Fill the pie shell with coffee ice cream. Smooth the top of the ice cream evenly with a knife. Put the pie into the freezer until the ice cream is firm (about 20 minutes).

When the ice cream is ready, top the pie with fudge sauce and spread with a spatula.

Slice and serve!
